    会做饭的男人最可爱之青椒肉丝

    【菜名】 青椒肉丝
    【所属菜系】 川菜
    【特点】 色美,红绿相间;肉嫩,焦脆适口。
    【原料】
    猪肉(肥肉与瘦肉之比为3比7)200克,青柿子椒70克,大油75克,盐2克,炒酒、面酱、葱各13克,酱油20克,湿淀粉15克,味精3克,姜8克,汤适量。
    【制作过程】
    (1) 将肉、葱、姜和青椒(去仔和瓤)均切成丝,肉丝用少许酱油、料酒、盐拌匀,然后浆上湿淀粉,再抹些花生油。

    (2) 用酱油、料酒、味精、葱、姜、湿淀粉对成汁。

    (3) 炒匀烧热注油,油热后即下肉丝,边下边用手勺推动,待肉丝散开,加入面酱,待散出味后加青椒炒几下,再倒入对好的汁,待起泡时翻匀即成。
